If you delete a flexshare it will not wipe all your data - just the share folder if you choose to do so. You will need to have your data mounted somewhere on your system regardless of how you configure the flexshare setup. The flexshare then sets up the permissions for users (ro or rw) and change ownership of the files/directories if required.
